Coffret Prestige Kiritsuke Spectre : le couteau, son entretien et votre sécurité
Ce coffret réunit le Kiritsuke de la collection Prestige Kaitsuko et les deux accessoires qui l'accompagnent au quotidien : un fusil à aiguiser pour entretenir le fil et un protège-doigt en acier inoxydable pour guider la lame en toute sécurité. Vous choisissez le manche de votre Spectre parmi six coloris, la lame reste la même.
Le contenu du coffret
- 1 couteau Kiritsuke Spectre : lame de 21,5 cm en acier 10CR15CoMoV, 58-60 HRC, 67 couches de damas en construction San Mai, affûtée à 15° par côté. Manche en bois stabilisé et résine époxy, dans le coloris de votre choix.
- 1 fusil à aiguiser : tige de 20 cm en acier inoxydable, poignée ergonomique. Quelques passages légers suffisent à redresser le fil entre deux affûtages.
- 1 protège-doigt en acier inoxydable 304 : 6,5 x 4,5 cm, anneau réglable, droitiers et gauchers. Il sécurise la main et sert de guide pour des juliennes et des brunoises régulières.
Choisissez votre Spectre
- Spectre I : résine rouge vif et bois aux nuances de marron. Le plus chaud et le plus vibrant.
- Spectre II : bois clair côté lame, résine blanche côté pommeau. Le plus lumineux, celui qui contraste le plus avec le damas.
- Spectre III : résine noire et bois beige. Le plus sobre.
- Spectre IV : bois exotique vert et beige figé dans la résine. Le plus organique et artistique.
- Spectre V : résine rouge profond, presque bordeaux, sur bois clair. Le plus saturé.
- Spectre VI : résine bleu profond sur bois clair. Le plus frais, un rappel de l'océan face au damas.
Le bois est imprégné en profondeur pour résister à l'humidité, la résine verrouille la structure du manche et la prise ne glisse pas, même les mains humides. Les veines et les nuances varient d'une pièce à l'autre : deux Spectre du même coloris ne sont jamais identiques.
Pourquoi un Kiritsuke
Lame longue, profil rectiligne et pointe angulaire « K-Tip » : le Kiritsuke combine la longueur du Yanagiba (poisson) et le tranchant droit de l'Usuba (légumes). Il lève les filets et tranche les sashimis en un seul mouvement, cisèle les herbes talon à plat sur la planche et glisse à travers les viandes sans os. Traditionnellement réservé au chef dans les cuisines japonaises, le Spectre adopte un double biseau symétrique et un manche de type occidental : il convient aux droitiers comme aux gauchers. À 58-60 HRC, son acier tient le fil bien plus longtemps que la gamme Chef Tanaka (53-54 HRC), mais il ne pardonne ni les torsions ni les chocs sur les os. Le protège-doigt du coffret aide justement à garder un geste régulier dès les premières découpes.
