Before deciding what to do, you need to look precisely at what happened to the blade. Three very different situations call for three different responses.

A micro-chip, barely visible to the naked eye but felt when running a fingernail along the edge, can almost always be corrected with a standard whetstone sharpening. This is the most common case, and by far the simplest to resolve yourself.

A cleaner chip, clearly visible on the edge, requires more work: you need to remove more material to make the defect disappear completely, which may slightly alter the blade profile at that precise point - without any significant impact on the knife's overall performance.

A bent blade, a cleanly broken tip, or a chip extending over several centimetres requires a different level of repair entirely, demanding specific equipment (a grinding wheel, diamond sharpener) and real technical skill. These are the cases where replacement becomes a legitimate question.

To assess the extent of the problem accurately, here's the method we recommend to our customers. First, run a fingernail perpendicularly along the edge, along its full length: if you feel a definite catch at a specific point, there's an irregularity, even if it's not visible to the eye. Then hold the blade up to the light at a slight angle: a chip often shows as a slightly different reflection, an area where the edge seems to "disappear" over a few tenths of a millimetre. For more obvious damage, a pocket magnifier or even your phone camera in macro mode gives a better sense of the chip's actual depth before deciding how to proceed.

Can You Repair a Chip Yourself?

For a light to moderate chip, yes, and it's quite accessible with a suitable whetstone. The principle is simple: you progressively remove material from the entire edge until the defect disappears completely, without trying to repair only the damaged area, which would create an uneven edge.

In practice, you work the blade on a coarser-grit stone (around 400 to 1000) to erase the chip, maintaining a constant and symmetrical angle on both sides. Alternate passes on each side rather than correcting everything on one side at a time, which would off-centre the edge. Once the chip has gone, finish with a finer grit to restore a clean, sharp edge.

The important point to remember: the harder the steel, the more time and patience this takes, because more material needs to be removed for the same result. On a steel around 53–56 HRC, like our Chef Tanaka collection, the repair remains relatively quick. On a 58–60 HRC Damascus steel, like our Yakumoto or Yellow Sea collections, the same work takes longer, but is entirely feasible with a suitable stone and some patience.

Here are the concrete steps for repairing a moderate chip yourself:

Dampen your medium-grit stone (400–1000) according to the manufacturer's recommendations. Position the blade at its original angle, generally around 15° per side on a Japanese knife, and identify the area to correct precisely. Make five passes on each side alternately, rather than correcting everything on one side then the other: this regular alternation prevents off-centring the edge, which would produce a blade that cuts more easily from one side than the other.

Continue this cycle until the chip has completely disappeared along its full length, checking regularly by touch and in the light. Once the defect is gone, finish with a finer grit (1000 to 3000) to restore a clean edge, then a light pass on a honing steel to realign the final edge. This last step removes the burr the small metal residue that forms during sharpening and would give a false impression of sharpness if left.

Is Repairing Really Cheaper Than Replacing?

This is often the question that determines the final decision, and the answer isn't always what you'd expect. Repairing a chip yourself with a stone you already own costs nothing but your time, which makes this option almost always worthwhile for light to moderate damage.

The situation changes if you don't yet have a whetstone: investing in a quality stone, which will then serve for the regular maintenance of all your knives, is generally more advantageous in the long run than having a single blade repaired by a professional, whose fees often include shipping, assessment and a wait of several weeks.

For more significant damage requiring a specialist cutler, the calculation becomes more personal. If your knife has genuine sentimental value, or it's a high-end piece like a multi-layer Damascus steel knife, professional repair is justified even if its cost represents a significant portion of the price of an equivalent new knife. On the other hand, for a badly damaged entry-level knife, replacement is often the simplest and most economical choice.

An important clarification on this point: a chip resulting from normal use — which covers the vast majority of cases (bone impact, drop, unsuitable board) — falls under product wear, not a manufacturing defect. Repairing a chip has a hidden cost: every repair removes material, so it slightly shortens the blade and alters its original geometry. For an occasional small chip, that loss is negligible. But some situations justify replacement instead.

A very large chip, extending over several centimetres of the edge, would require removing so much material that the blade would lose its original shape and balance. A cleanly broken tip fundamentally changes the knife's usable length. A bent blade, particularly on a hard and therefore more brittle steel, risks breaking completely if you attempt to straighten it without the right equipment and expertise.

How to Prevent Chips in Future

Prevention beats repair. A few simple rules drastically reduce the risk of chipping a Japanese knife.

Avoid glass, marble or ceramic boards entirely: they're attractive, but far too hard for a fine blade, and are one of the most common causes of chipping. Always use a wooden board or quality soft plastic.

Never cut partially frozen foods with a Japanese knife: the unpredictable resistance significantly increases the risk of impact on the edge. Similarly, avoid cutting bones with a Gyuto, Santoku or boning knife: these are kitchen knives, not cleavers.

The risk also varies by knife type. A Nakiri, with its wider blade and near-exclusive use on vegetables, is statistically less exposed to chipping than a Gyuto that goes through multiple uses in a single day - both meat and vegetables. A Kiritsuke or a fine, long-bladed knife requires particular care around the tip, which remains the most fragile area of any blade, especially during storage or transport.

Finally, pay attention to storage: knives knocking against each other in a drawer chip more easily than a blade stored on a knife block or magnetic bar, protected from contact with other metal objects. How many times can the same blade be repaired before it becomes too short? That depends on the frequency and size of chips to correct. For normal use with occasional light chips, a knife can be resharpened for many years without notable loss of length.
