Japanese knives, which have been in vogue for several decades or even centuries, have managed to make a reputation for themselves throughout the world. It is said that these knives are the sharpest in the world.
Initially, cutlery workshops or blacksmith shops exclusively designed Japanese swords. Often considered as weapons, swords were stopped in terms of manufacturing. Craftsmen and blacksmiths then focused on the food sector through the unique manufacture of knives. Each Japanese knife is unique and must be used for specific purposes.
Japanese knives can be made of different materials. However, Damascus steel is undeniably different from other types of steel. Indeed, its sharpness and durability are no longer a secret. It also has the specificity of offering the most beautiful blades in the world. This steel is greatly appreciated by many chefs due to its appearance and its unrivaled performance.
To define it, we can indicate that Damascus steel knives are knives composed of two or more different steels. Initially, Damascus steel was made in India or Uzbekistan. The craftsmen initially used an Indian steel called wootz which had a high carbon content. These blades were mainly used for the design of bladed weapons and swords. The manufacture of Damascus swords began in -300 BC and continued until the end of the 1750s. Following the exhaustion of woots, the craftsmanship was somewhat lost. It was not until the 19th century that blacksmiths began to take an interest in this technique again. In the 1820s, a new manufacturing process was discovered. The artisanal forging technique consists of assembling two to three different steels together. They are then welded over a fire using hammering in order to obtain a united block. The blacksmith then puts the block back in the fire so that it can be stretched and folded back on itself. It is then re-welded. These operations can be repeated endlessly. They allow the blacksmith to create hundreds of layers, and thus create astonishing and unique patterns. The heating temperatures can reach 1300-1400° degrees. As you will have understood, the characteristics of Damascus steel are based on their resistance and originality.
