We love discovering new recipes, and especially developing them using our Kaitsuko knives .

Every month we are on the lookout for new cookbooks and pastry books, and we always take inspiration from the greatest. Today, we would like to tell you about Cyril Lignac's books. A great chef, renowned pastry chef, and known by most French citizens, we appreciate his personality as much as his books which offer simple recipes to make accessible to all. Several volumes are available for sale today on the platform of the e-commerce giant, Amazon. We present our favorite versions.

Chicken and vegetable spring rolls with tangy sauce

INGREDIENTS :

  • 250 g of chopped/minced chicken breasts
  • 1 carrot, peeled and chopped
  • 1 onion, peeled and chopped
  • 50 g of washed button mushrooms cut into small cubes
  • 125 g of bean sprouts
  • 50 g mango bean vermicelli soaked in water
  • 3 tablespoons soy sauce
  • 1 egg
  • 16 rice cakes
  • 1 teaspoon corn flour
  • 1 beer
  • a few leaves of salad and mint to serve with the spring rolls
  • sauce: 1 lime juice / 1 teaspoon of nuoc mam sauce + sugar
  • sunflower oil

THE DIFFERENT STEPS:

Step 1: Cut the vermicelli into small pieces, about 3 cm long. Mix with the chicken in a bowl ax finely chopped carrot, chopped onion, mushrooms cut in small cubes, the bean sprouts, the soy sauce, and the whole egg.

Step 2: In a small ramekin, pour very hot water with a little beer to then unstick the rice cakes. Mix the tapioca flour with a little water in a second ramekin and set aside.

Step 3: Dampen a tea towel with cold water, wring it out and place it on your work surface. Dampen your first rice cake in the hot water and beer mixture. Place it on the damp tea towel. Place a tablespoon of the mixture prepared earlier on it. Place it in the center of the cake, about 3 centimeters from the edge.

Step 4: Fold the right and left edges towards the center, and roll the galette without crushing the filling. To stick your galette together, use the flour-water mixture. Finish rolling.

Step 5: In a wok-type pan, pour about 3 cm of oil. Place the spring rolls and cook for 3 minutes on each side. Remove from the heat.

Step 6: The sauce! Mix the lemon juice, nuoc mam sauce and sugar in a bowl. Set aside.

Step 7: Return the spring rolls to the cooking for 3 minutes.

Step 8: Serve. Place the spring rolls on a plate with the salad and mint leaves.

Step 9: Enjoy your meal! Don't forget to dip your spring rolls in the sauce for more flavor.

Chocolate Banana Pancakes

  • 250g flour
  • 30g caster sugar
  • 17g baking powder
  • 1 pinch of fine salt
  • 2 organic eggs
  • 65g melted butter
  • 30cl of whole milk
  • Grapeseed oil
  • 1 banana, peeled and cut into thin slices
  • 12.5cl of whipped vanilla whipped cream
  • A few spoonfuls of spread

Step 1: Mix the sugar, flour, yeast and salt in a bowl. Gradually add the eggs and mix gently. Melt the butter and pour it in slowly while stirring. Carefully add the milk and mix. Leave to stand for 15 minutes at room temperature.

Step 2: In a crepe pan, spread a little oil. Form discs about 10 cm in diameter. Place a spoonful of spread in the center. Cover with pancake batter. Let brown for a few minutes on each side.

Step 3: Optional! For an extra treat, once cooking is complete, place banana slices on your pancakes, as well as whipped cream.
